Description of Work Unit
The Department of Food Science and Human Nutrition has 20 faculty members and 23 research associates and administrative staff, ~600 undergraduate majors in nutrition, dietetics, food science and hospitality management, 70 M.S. graduate students, and 14 Ph.D. students. A new Fermentation Science Program has been introduced for academic year 2015-2016. Department research is supported by federal grants from NIH and the USDA, as well as foundations and industry, and two endowments that support a faculty chair and the Lillian Fountain-Smith Nutrition Conference hosted by the department each year. Research has focused on childhood obesity, community nutrition among limited resource audiences, molecular and metabolic nutrition targeted at chronic disease prevention, bioactive food components, and food safety. The department’s Extension faculty is responsible for numerous creative, high impact educational and engagement programs throughout the state, including EFNEP and FSNE. A new MPH program focus area in Public Health Nutrition within the School of Public Health provides new collaborative opportunities, and the department houses one of the nation’s few Peace Corps Masters International Programs in Nutrition. The department offers an accredited B.S. dietetics program and an M.S. coordinated dietetic internship program. With the overall growth in the department, there has also been growing faculty and student diversity.
